Chef Aaron Sanchez loves properly prepared and served birds of all kinds, but this one really hits the spot for him. That's why he strongly urges you to order a serving when you're in town as you really won't regret it. Topped with aged balsamic and a sprig of rosemary - it really is a work of art.
